Ingredients
1 kg of potatoes
4 cloves of garlic crushed
½ a teaspoon of black pepper
½ a teaspoon of red chili powder
4 tablespoons of olive oil
½ a tablespoon of salt
Chopped coriander for garnish (optional)
Cooking Instructions:
Wash and peel the potatoes cut them into quarters. In a large pot add the potato cubes, water and ½ a tablespoon of salt. Boil the potatoes for about 10 minutes and remove from heat.
In a pan heat 4 tablespoons of extra-virgin olive oil and add the crushed garlic sauté until slightly brown. Strain the infused oil and drizzle on top of the boiled potatoes.
To the pan add black pepper, chili powder and salt as desired. On medium heat continue to stir the potatoes and turn them on each side until they are golden brown. Let the potatoes cook for about 15 to 20 minutes.
Once done the potatoes should be crunchy on the outside and soft on the inside. If you like you can garnish the roasted potatoes with coriander. Serve the roasted potatoes and enjoy with a meat dish of your choice or vegetables.
