Kidney beans Pilau has many different names in different parts of the world from Spanish rice to Jamaican rice. It is an easy and delicious recipe, especially if you have leftover beans from the previous night. It is nutritious yet quick and simple. It is great for lunch or dinner.
Ingredients
1 large onion finely chopped
2 medium tomatoes
3 medium size cloves of garlic
1/4 of ginger root
½ a teaspoon of turmeric powder
2 cups of rice
2 cups of pre-cooked kidney beans
2 cups of water
2 cups of rice
Extra-virgin olive oil
½ a tablespoon of salt
black pepper to taste
Pre-Cooking Instructions
Wash and soak kidney beans overnight. In a medium size pot, boil the kidney beans for about 30 minutes until well done.
In a bowl wash the two cups of rice rinse until the water is clear and set aside for 30 minutes to soak.
Cooking Instructions
In a large pot add olive oil and chopped onion sauté the onions until golden brown. Add the chopped tomatoes, ginger, garlic and turmeric powder. Cover and let it cook for 10 minutes. Add the pre-cooked beans and two cups of water.
In the pot add salt and pepper to taste, stir and cover. Let it cook for 10 more minutes. Drain the soaked white rice and add to the pot. Stir and cover for twenty minutes. Remove the lid and stir the rice once more, cover for another five to ten minutes until well done. Remove from heat once the rice and beans are done. Serve with a tomato and onion salad of your choice and enjoy!
